The details

Meet your next everyday essential.

This kit recreates Chef Tom's honey mustard rotisserie turkey: a bright lemon-thyme brine, a peppery Texas-style bark, and a glossy honey-mustard glaze that goes on right before the bird comes off the fire.

You get two 16 oz. bottles of Sweetwater Spice Lemon Thyme Turkey Bath, a 9.9 oz. bottle of Cattleman's Grill Lone Star Brisket Seasoning, 8 oz. of Kozlik's Market Mustard, and 12 oz. of Reida Farms Honey. Whisk both brine bottles with 1 cup kosher salt and 2 gallons of cold water, brine the turkey about 1 hour per pound (roughly 14 hours for a 14 lb bird), then truss it onto a rotisserie spit and season liberally with the Lone Star Brisket Seasoning for a pepper-forward bark. Whisk equal parts mustard and honey for the glaze, and brush it on once the breast hits about 135°F so it caramelizes instead of burning.

This one's built specifically for rotisserie cooking — spinning the bird gives you the even, self-basting cook that turns the glaze into a lacquer instead of just a coating. Use a meat thermometer and cook to at least 165°F in the thickest part of the breast, the USDA's minimum safe temperature for poultry.
